      Title: Blueberry Muffins
 Categories: Bakery, Muffins
      Yield: 12 muffins

      2 c  White flour
      1 tb Baking powder
    1/8 ts Salt
    3/4 c  Sugar
      1 oz Tofu
    1/2 c  Water
      3 tb Oil
      1 c  Blueberries, fresh or frozen

  Preheat the oven to 350F.  Grease muffin pans.  Mix the flour, baking
  powder, salt, and sugar in a large bowl.

  Thoroughly mash the tofu, and mix together with the water and oil, or
  process in blender or food processor.

  Reserve 1/4 cup of the flour mixture, then mix the rest together with
  the water and oil mixture.  Toss reserved flour mixture over
  blueberries, then stir them into the batter.

  Divide batter evenly into muffin cups and bake until toothpick
  inserted in center comes out clean (about 20 minutes?).
