      Title: Stuffed Steak
 Categories: Wild game, Main dish
      Yield: 1 servings

           -bacon -steak
-green onion 1 ts Of olive oil
-bell peppers 3/4 c Of water
-any thick-cut wild game -brown gravy

Try frying up some bacon until it is crisp, and crumbling it into bits. Add
finely chopped green onion and/or bell peppers and saute for about 5
minutes over medium heat. Set aside. Get any thick-cut wild game steak
available and, usuing a sharp knife, cut a hollow area in the steak. Start
from one side and simply slice out a cavity, leaving your hole in the side
as small as possible. Stuff the cavities with the bacon bit mixture and
brown in skillet on both sides in about a teaspoon of olive oil. Then turn
the burner to its lowest setting, add about 3/4 cup of water, and simmer
for about an hour. Serve with brown gravy on top if desired.

I have found this method to work very well with wild game such as venison,
moose, and caribou. It takes out any gamey taste that might be in the
meat. During the off-season, my wife and I really like Stuffed New York
Steak, but she doesn't care for the onoins!
