      Title: Southern Style Chicken & Dumplings

      Yield: 4 servings

      3 ea Boneless, skinless chicken
           -breasts OR 3 cups cooked
           -chicken
      3 c  Water
      2 md Potatoes, peeled, cut into
           -chunks
      1 md Onion, diced
      2 ea Stalks celery, diced
    1/4 ts Basil
    1/4 ts Italian seasoning
    1/2 ts Morton's Nature's Seasoning
      1 ts Mrs. Dash Seasoning
  2 1/2 c  Chicken broth
      2 ts Chicken bouillon granules
     16 oz Can peas and carrots
           DUMPLINGS:
      1 c  Bisquick
    1/3 c  Milk
      1 ts Fresh minced parsley

  In a large pot, add water and chicken breasts and gently boil for about 30
  minutes or until tender.  Remove chicken to cool.  Strain broth and
  reserve 2 1/2 cups.  Cut chicken into bite-sized pieces.  Return to pot.
  Add 2 1/2 cups of chicken broth, potatoes, onion, celery, basil,
  seasonings and chicken bouillon.  Simmer for about 20 minutes.  Add peas
  and carrots.  Simmer about 10 minutes longer.

  Heat chicken mixture until it bubbles.  Immediately, add large spoonfulls
  of a mixture of the dumpling ingredients on top of the chicken mixture in
  the pot.  Immediately cover with a lid and cook over low heat for 15-20
  minutes.  DO NOT PEEK OR REMOVE THE LID ON THE POT DURING THIS 15-20
  MINUTE COOKING TIME!

  When cooking is done, gently remove the lid.  Serve hot.
