      Title: Grits Casserole
 Categories: Brunch
      Yield: 8 servings

      2 c  Hot cooked grits
    2/3 c  Skim milk
    1/2 c  Butter/margarine
      2 ea Eggs
      4 oz Grated cheddar cheese
    1/2 c  Crumbled crisp cooked bacon
    1/2 c  Diced onion, sauteed
    1/4 c  Diced green pepper, sauteed

  Preheat oven to 375 degrees.  Add eggs to milk and then mix with grits.
  Put into greased casserole dish.  Set casserole into pan of water or place
  pan of water on shelf below grits casserole.  Bake 1 hour.  During the
  last 10 minutes of cooking add the cheese, drained onion and drained green
  pepper.  Crumble the bacon on top after removing from the oven.  Before
  serving, sprinkle with a little paprika if desired.
