      Title: Mushroom Crostini

      Yield: 4 servings

MMMMM------------------VEGETARIAN TIMES; OCT 94-----------------------
      2    Garlic cloves; minced
      1 ts Olive oil
      1 lb Mushrooms; sliced very thin
           Juice of one lemon
      1    Loaf Bread for Crostini or
           -other Italian bread
      1    Garlic clove
    1/4 c  Italian parsley leaves;
           -minced

   In a large nonstick skillet, heat oil. Saute minced garlic in olive
  oil 1 minute. Add mushrooms and lemon juice; cook over medium heat
  until liquid has evaporated, about 10 minutes. Slice bread into
  1/2-inch thick slices; toast bread. Rub toast with remaining 1 clove
  garlic. Top each bread slice with mushroom mixture and sprinkle with
  parsley. Serves 8 as an appetizer; 4 as an entree.

   Per entree serving: 128 cal; 4 g prot; 1 g fat; 24 g carb; 0 chol;
  150 mg sod; 3 g fiber; vegan
