      Title: Chicken Sour Cream Enchiladas
 Categories: Main dish, Meats
      Yield: 10 servings

      1    16oz. sour cream, divided
      2 c  Cooked chicken, chopped
      1    8oz. natural shredded colby/
           Mont. Jack cheese, divided
      1 c  Salsa, divided
      2 tb Cilantro, chopped
      1 ts Ground cumin
     10    Flour tortillas (6-inch)
      1 c  Each shredded lettuce &
           Chopped tomato

  Mix 1 cup of sour cream, chicken, 1 cup of cheese, 1/4 c. of salsa,
  cilantro & cumin.  Spoon about 1/4 c.  of chicken mixture onto each
  tortilla; roll up.  Place in 13x9 baking dish.  Top with remaining 3/4 c.
  salsa, cover
  Bake at 350 F. for 30 minutes.  Sprinkle with remaining 1 cup of cheese,
  continue baking until cheese is melted.  Top with lettuce & tomato.  Serve
  with remaining 1 cup sour cream.
