      Title: Corn Relish
 Categories: relishes
      Yield: 16 8-oz jars

      2 qt cut corn (about 18 to
           -20 ears)
      1 qt chopped cabbage
      1 c  chopped green pepper
      1 c  chopped red pepper
      2 lg onions, chopped
  1 1/2 c  sugar
      2 tb ground mustard
      1 tb mustard seed
  1 1/4 tb salt
    1/4 ts cayenne pepper
      1 ts ground turmeric
      1 c  water

If corn is on cobs, boil for 5 minutes, dip in very cold water and cut
from cob.  Measure kernels.
Place all chopped vegetables and the corn in kettle and stir in all
remaining ingredients.  Place over medium heat, uncovered, and bring
to a boil, stirring occasionally.  Lower heat and simmer for 20
minutes.
Pack immediately into hot, sterilized jars and seal.

Untensils needed: Large heavy kettle
Cooking time: about 40 minutes
Quantity: About 16 8-ounce jars
