      Title: Baked Yams and Apples with Maple Glaze
 Categories: Try it, Vegan, Side dish
      Yield: 8 servings

MMMMM------------------VEGETARIAN TIMES; OCT 94-----------------------
      3 lg Garnet yams or large sweet
           -potatoes; peeled and sliced
           -into 1/4" rounds
      3    Cooking apples; cored and
           -sliced into 1/4" slices
    3/4 c  Maple syrup
    1/4 c  Apple cider
           Salt and pepper to taste

   Preheat oven to 400 degrees. Arrange yams and apples in 9" by 13"
  baking dish or casserole in alternating layers.

   In a saucepan, bring syrup and cider to a boil; remove from heat.
  Pour over yams and apples. Sprinkle with salt and pepper.

   Cover baking dish with foil; bake 1 hour. Uncover; bake until yams
  are soft and syrup is thick, about 15 to 20 minutes more. Makes 8
  servings.

   Per serving: 208 cal; 1 g prot; 0 fat; 51 g carb; 0 chol; 11 mg sod;
  4 g fiber; vegan
