      Title: Pineapple Pie

      Yield: 6 servings

      1    Pie crust, top & bottom
      2 lg Eggs, beaten lightly
  1 1/2 c  Sugar
      1 tb Lemon juice
      2 ts Flour
    1/4 ts Vanilla
      1    Pineapple, cut into 1/2"
           Cubes tp make 2 1/2 cups

  In bowl, beat eggs with sugar until mixture is combined well.  Stir in
  lemon juice, flour, vanilla and a pinch of salt.  Prick bottom of pie
  shell with fork.  Fold in pineapple and spoon filling into pie shells.
  Brush edge of the shell with water.  Place the top crush over filling and
  seal edges to bottom crust.  Bake pie in preheated 450 oven for 10
  minutes, then reduce heat to 375 and bake for 30-40 minutes, or until crust
  is golden.  Let pie cool on rack.
