      Title: Parmesan-Yogurt Chicken

      Yield: 6 servings

      1    2 lb. fryer chicken, skinned
           & cut up
      2 tb Fresh lemon juice
           Salt & pepper to taste
    1/2 c  Low-fat plain yogurt
    1/4 c  Lite mayonnaise
    1/4 c  Scallions, sliced
      2 tb Dijon mustard
      1 ts Worcestershire sauce
      1 ts Fresh thyme or 1/3 ts dried
           Thyme
    1/4 ts Cayenne pepper
    1/4 c  Parmesan cheese, freshly
           Grated

  Preheat oven to 350 degrees.  In large glass baking dish arrange chicken
  in a single layer.  Drizzle with lemon juice. Sprinkle wit salt and pepper.
  In a small bowl combine yogurt, mayonnaise, scallions, mustard,
  worcestershire sauce, thyme, and cayenne pepper; mix well.  Spread over
  chicken.  Bake for 50 minutes.  Drain off juices. Preheat broiler.
  Sprinkle cheese over chicken.  Broil chicken 4 inches from heat source for
  about 3 minutes or until cheese melts and browns slightly.
