MMMMM----- Recipe via Meal-Master (tm) v8.02

      Title: PINEAPPLE OR PEACH UPSIDE-DOWN CAKE

      Yield: 1 servings

      5 Tb butter
      1 c  firmly packed brown sugar
      5    or 6 slices of pineapple or
      1 qt drained sliced peaches
  1 1/2 c  sugar
    1/2 c  pineapple or peach juice
  1 1/2 c  cake flour
    1/4 ts salt
  1 1/2 ts baking powder
    1/2 ts vanilla extract

Melt butter and brown sugar in a 9x13" baking pan until bubbly and smooth.
Add pineapple or peaches to cover bottom of pan.Beat egg yolks until light
yellow. Beat egg whites until stiff peaks form. Add remaining ingredients;
mix well. Fold in egg whites. Pour batter over pineapple or peaches. Bake at
450' for 5 minutes. Reduce temperature to 350'. Bake for about 45 minutes
longer or until cake tests done. Turn upside-down onto serving plate.
