Another "Laid Back" recipe

(*I have been wanting to use this name for a long time. Years ago when I was
in Arizona there was a gravel track east of Phoenix called the Apache Trail
that clung to the south side of the Salt River Canyon winding away towards
Roosevelt Dam. Somewhere on this track was a place called Tortilla Flat. As I
recall (it's been 35 years since I first drove it) it there was a saloon and
souvenir place situated on a wide, flat spot.)

This is just a sort of "throw together" recipe. It came about, if you must
know, following an evening where we had prepared fajitas for some company. We
had a bit of this and a bit of that and a few flour tortillas left and didn't
know what to do with them. So, as you go through this keep in mind it is a
"throw together" recipe and quantities really have no place.

We ended up with a casserole that more than feed the two of us with a good
bit left over.

What we had were a half dozen tortilla's, a  nice portion of the fillings,
shaved cheddar cheese, Spanish rice, and salsa. We added some sliced low fat
Velveta Cheese. We also had some shredded lettuce and tomato pieces left over
to which we added a little sliced cucumber which we served for a nice dinner
salad

Preheat the Spanish Rice and the Fajita fillings. This will reduce the final
microwaving time.

We began by using a Mexican-design (as you know, how things look and how they
are served can add to the overall effect) stoneware microwave-safe bowl. You
can squirt a little spray no-stick (we use Mazola Corn Oil aerosol) just for
good measure. We first layer in the left over Spanish rice. Then we put the
Fajita fillings and the shaved cheddar cheese on the tortillas and folded
them up. In this case the "fillings" were sauteed onion, pepper, and beef.
Your imagination is really your only limitation...as well as what's been
leftover.

We placed the folded tortillas on the bed of Spanish Rice. On top of each
tortilla we placed a healthy slice of the low fat Velveta cheese and then
poured the leftover salsa on top of that.
These was microwaved long enough to melt the Velveta.

To really set the mood, use small serape placemats and stoneware dinnerware.
You will serve a nice Mexican-style dinner from the previous night's Fajita
bash leftovers. You might even consider a B&J marguerita cooler on the side.
