8 oz pork sausages
1/4 cup vegetable oil
1 medium sized onion, finely chopped
6 cups frozen hash brown potatoes, unthawed
1/2 tst salt
1/4 tsp black pepper
1 cup frozen green peas, unthawed
6 large eggs.

Place the sausages in a 12 inch skillet, pour in 1/2 inch of water,
cover, and bring to boil over moderate heat.  Cook for 10 minutes then
pour off the water and cook, uncovered, 10 minutes more or until nicely
browned.  Remove the sausages from the skillet, cut into thin slices,
and set aside.  Wipe out the skillet, add the oil, and set over moderate
heat for 1 min.  Add the onion and saute, stirring occasionally, for 5
minutes or until tender.  Add the potatoes, cover, and cook, stirring
occasionally, until they begin to brown-5-10 minutes.  Remove the cover
and sprinkle with the salt and pepper.  Continue cooking, uncovered,
stirring occasionally, until the potatoes are golden and tender, about
10 minutes more.  Stir in the peas.  Break 1 egg into a cup, then ease
into the skillet on top of the potatoes.  Repeat with the remaining
eggs, spacing them evenly.  Scatter the sausage slices around the eggs,
cover, and cook for 2-3 minutes or until the eggs are set.  Serves 6.
