     Title: Gingered Chicken Livers On Stir Fried Rice

8       oz  chicken livers

MARINADE:
1 clove garlic, crushed
1 tsp fresh root ginger, grated
1/2 level tsp caster sugar
1 tbsp soy sauce
few drops sesame oil

RICE:
3 tbsp oil, preferable sesame
2 oz button mushrooms, sliced
1/2 red pepper, de-seeded and diced
4oz bean sprouts
2 oz peas
4oz long grain rice, cooked until just tender
2 tbsp soy sauce
2 level tsp cornflour
oil for frying
spring onions, to garnish

Wash and drain the chicken livers.  Dry on kitchen paper and trim into 1
inch pieces.  Mix the marinade ingredients and add the livers.  Leave to
stand for 15 minutes.

Heat the oil in a frying pan or wok.  Add the mushrooms, pepper and
beansprouts and cook for 2-3 minutes, until the mushrooms are tender.
Add peas, rice and soy sauce, and cook for a further 2 minutes.  Keep
warm.   Toss livers in cornflour and fry over a high heat for 5 minutes,
stirring.  Thread on wooden cocktail sticks and serve with rice.
Garnish with spring onion.
