This is a great burger recipie
3/4 cup of bulgur (or sub 1 cup of instant brown rice)
1 small onion, quartered
1 small zucchina (approx 6 oz)
1 cup loosely packed shredded part skim milk mozz arella cheese
1/3 cup grated parmesan cheese
2 egg whites
2 tablespoons of tomato paste
1/4 teaspoon salt
1/4 teaspoon pepper
4 slices of cheese
i large tomato, seeded, cored and chopped
1/2 cup finely chopped red onion
2 tablespoons of shreeeded freash parsley
1 tablespoon of red wine vinegar
4 kaiser rolls

1. preheat oven to 375 lightly coat a baking sheet with no stick veggie
   cooking spray

2. Whirl bulger in food processor. Add onion ( mushroom if you like). Whirl
   all is finely chopped

3. Place bulger and onion in a medium bowl, add zucchini, mozzarella cheese,
   parmesan cheese, egg whites, salt and pepper, tomato paste. Stir until
   well mixed. Shape mixture into four patties.

4. Place on baking sheet and bake for 30 min or until crusty on the outside.
   when done place the single slices of cheese on the patties and return to
   oven and melt cheese. warm roll if desired.

5. Set aside to cool 5 min before serving.

Tomato salsa, combine tomato, red onion, parsely and vinegar in a small bowl.
Stir well, spoon onto burger when serving.

Makes four burgers, about $1.25 each

If you do not use a food processor, finely chop the onion and mushrooms
by hannd and leavce the bulgur (or rice) whole.
