Karithopita or Migthalopita (Greek Walnut Torte or Almond Cake)

Ingredients:

15 eggs
1-1/2 lbs walnuts, cleaned
      or 1/2 lb walnuts and 1 lb blanched almonds
9 zwieback                          3 t. vanilla
4 C. sugar                          1 jigger whiskey
1-1/2 t. baking powder, sifted      3 T. honey

     To blanch almonds, drop them into boiling water for a few minutes
until skins are easy to slde off. Dry well before grinding.
     Grind nuts and zwieback and mix together. Regind a small amount to
garnish top of torte.
     Preheat oven to 350 degrees and generously butter large round pan
about 14 inches in diameter and 2 inches deep.
     Seoerate egg yolks and whites into large bowls. Gradually add one
cup of sugar as you beat them until they are thick. Add whiskey and
vanilla. Beat egg whites till stiff. Pour egg mixture into the whites
and stir by hand. Add sifted baking powder, ground nuts and zwieback and
fold over till well mixed. Pour into greased cake pan and bake for about
45 minutes. Test after half hour and if it isn't browning enough raise
degree of oven a little higher. This may vary depending on oven. Color
should be nice dark brown.

     While cake mix is baking prepare the syrup. In saucepan put three
cups sugar and 3 cups water and bring to boil. Add honey and gently boil
and skim off top matter as it accumulates. Cook for 1/2 hour. Pour hot
syrup very slowly over hot cake. Be sure to pour syrup very slowly
covering all areas. Sprinkle the reserved nuts on top and let cool. Cut
into diamond shaped pieces.
