    RECIPE NAME: GRILLED ANTIPASTO BREAD
KEY INGREDIENTS: salami, olives, mozzarella
         SOURCE:

Serves 6

1/2 cup (1 stick) sweet butter, softened
1 Tbsp. tomato paste
1/2 cup finely chopped Genoa salami (about 8 slices)
2 Tbsp. chopped black olives
1 tsp. chopped fresh oregano (or 1/4 tsp. dried)
1/4 lb. Mozzarella cheese, sliced
1 loaf fresh Italian bread, halved lengthwise

Preheat oven to 450 degrees.

In a medium bowl, mash together butter and tomato paste with a fork
until creamy.  Fold in salami, olives and oregano.  spread butter
mixture on cut sides of bread and place on baking sheet, butter side
up.  Bake 10 minutes.  Remove bread from oven and turn oven to broil.
Arrange cheese slices over buttered bread and return to oven.  Broil
until cheese is lightly browned.  You can serve this as an appetizer.
