                             Fried Grits

Ingredients:

4 C. water                 1/2 C. packaged seasoned bread crumbs
1-1/2 C. milk              1 t. parsley flakes
1/4 C. butter              3 large eggs
1 t. salt                  1/4 C milk
2 C. grits                 1/4 C. oil
1-1/2 C. unsifted all
         purpose flour

     In a large saucepan, combine 2-1/2 cups of water, the milk, butter,
sugar, and salt and bring to a boil. In a small bowl, combine the grits
mixture into the boiling milk mixture. Cook stiring constantly, until
thick and bubly. Cover and cook over low heat for 5 minutes. Pour grits
into a greased 9x5-inch loaf pan. Cool to room temperature. Cover tightly
and refrigerate until firm, several hours or overnight.
     In a large bowl combine the flour, bread crumbs and parsley. In a
seperate bowl beat the eggs and milk. Unmold the grits loaf and cut into
16 slices. In a large, deep skillet, heat the oil over high heat. Dip
the grit slices into the flour mixture, then in the egg mixture, then
the flour mixture again. Fry the slices in the hot oil, turning
occasionally until golden brown.
