    RECIPE NAME: DINER STYLE MASHED POTATO-MEATLOAF PIE
KEY INGREDIENTS: ground chuck, potatoes, cheese
         SOURCE:

Serves 4-6.  A great dish for meat and potato lovers!

Meatloaf filling:
2 Tbsp. butter/margarine
1 Tbsp. vegetable oil
1 small green bell pepper, chopped
1 small onion, thinly sliced
3/4 lb. ground beef chuck
1 egg
1/4 cup ketchup
1/2 cup dry bread crumbs
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. cayenne pepper
2 Tbsp. light cream or half and half

1 deep dish unbaked pie shell (9")

Potato Topping:
2 large potatoes, peeled and cut into large chunks
2 Tbsp. sweet butter
1/2 tsp. salt
1/4 tsp. pepper
1 Tbsp. light cream
1/2 cup shredded Cheddar cheese

Preheat oven to 375 degrees.

For meat filling:  In a small skillet, heat butter with oil.  Cook
bell pepper and onion until onion is golden.  Transfer to a large
bowl.  Add the remaining meat filling ingredients and mix thoroughly
with hands.  spread mixture in pie shell and bake 30 minutes.

Make potato topping:  while meat is cooking, boil or steam potatoes
until tender, about 15 minutes.  drain and return to saucepan or dish.
Add butter, salt, pepper and cream and beat with an electric mixer
until smooth and fluffy.  Fold in cheese.

Remove meat pie from oven and mound potato mixture on top.  Return to
oven and bake 20 minutes more.  Turn oven to broil and lightly brown
the top to give it a nice look.
