    RECIPE NAME: DODGE CITY RIBS
KEY INGREDIENTS: pork, whiskey, mustard, butter
         SOURCE:

Serves 6

5 lb. Western-style pork ribs (the meaty kind
1 Tbsp. freshly ground black pepper

Sauce:
28 oz. can tomato puree
1/2 cup cider vinegar
1/2 cup peach preserves
1/2 cup whiskey
1/3 cup prepared brown mustard
3 Tbsp. lemon juice
1/4 cup firmly packed brown sugar
1 tsp. salt
1/2 tsp. ground white pepper
1/2 tsp. crushed red pepper
3 Tbsp. sweet butter

Preheat oven to 375 degrees.  Place ribs in a large roasting pan with
2 cups water.  Sprinkle pepper over, cover tightly with heavy foil and
bake 1 hour.

Make barbecue sauce.  Put all sauce ingredients in a large saucepan.
Slowly bring to a boil and simmer, uncovered, 15 to 20 minutes.

Remove ribs from oven and drain water off.  Increase oven temperature
to 475 degrees.  Pour 2 cups barbecue sauce over ribs, return to oven
and bake uncovered 45 more minutes.  Brush with additional sauce
before serving.  Save any leftover sauce for the next time you'll be
grilling or baking.

Note:  Ribs may also be grilled.  After 1 hour baking process, finish
cooking on grill, basting frequently with sauce.
