    RECIPE NAME: DROP MEATBALLS 'N MACARONI IN BEEF SAUCE
KEY INGREDIENTS: gr. round, macaroni, cheese
         SOURCE:

Melt-in-your-mouth meatballs that require no rolling - smothered in a
light sauce and tossed with macaroni.

Serves 4-6

Meatballs:
1 1/2 lb. ground beef chuck or round
2 Tbsp. tomato paste
4 cloves garlic, minced
1/4 cup grated Parmesan cheese
1/2 cup dry bread crumbs
1 tsp. salt
1/2 tsp. pepper
2 eggs
1/4 cup milk

Other ingredients:
2 cups inexpensive white wine
2 Tbsp. cornstarch
2 cups beef stock or broth
1/2 cup light cream
8 oz. elbow macaroni, cooked and drained

Make meatballs by mixing all meatball ingredients in a large bowl.
Mixture will be soft.

In a large, deep skillet, bring wine to a simmer.  Pinch teaspoonfuls
of meat mixture and drop into wine (use both hands and do two at a
time).  Let simmer 10 minutes, uncovered.  gently turn and cook
another 10 to 15 minutes.  Pour off most of the remaining liquid.
Dissolve cornstarch in beef stock and add to skillet.  simmer about 5
minutes, or until slightly thickened.  Pour in cream and add cooked
macaroni.  Toss well, heat through, and serve.
