I sometimes make bread sticks by this recipe.  They turn out soft and chewy.

1 package dry active yeast
3/4 cup plus 2 tablespoons warm water (120 - 130 degrees)
1 teaspoon salt
2 3/4 cup flour (use bread flour)

dissolve yeast in water and let sit for about 5 minutes (until foamy on top).
Mix flour and salt in large bowl, add yeast mixture and stir until dough
forms.  You will probably have to use your hands instead of a spoon.  Turn
dough out onto a floured board and knead for 10 minutes, adding flour as
necessary.  Pour about 2 tablespoons olive oil in a large bowl, place dough in
bowl, turning to oil all sides.  Cover and let rise for 2 hours in a warm
place.  Punch dough down and form into sticks.  Let rest for 10 minutes, then
bake at 450 degrees for about 15 or 20 minutes.  Brush with melted butter and
sprinkle with garlic powder , if desired.
