                     Plain Pastry for pies
2 cups flour
3/4 teaspoon salt
1/2 cup shortening
5 tablespoon ICE WATER
Sift flour into a bowl with the salt. Cut in the shortening by holding
two sharp knives scissor style. Mix lightly, stirring with a fork while
adding water. Try to pour water on dry, floury parts of mixture. Form
into a ball with lightly floured hands. Chill. Roll out on lightly
floured board, lifting rolling pin rather than pulling back, always
rolling in one direction. Makes 2 8" crusts

                       Butterscotch Pie
2 Tablespoons butter                    1/4 cup water
1 cup brown sugar                       1 teaspoon vanilla
2 scant TABLSP flour                    Pinch of salt
2 eggs                                  2 Tablespoon white sugar

Use half of the Rich pastry recipe.
Line pie tin and bake the shell in 350 degree oven until medium brown.
Cream brown sugar and butter add flour. Place mixture in top of double
boiler, over boiling water, bring mixture to a boil. Beat egg yolks
lightly, mix with water; add to mixture. Simmer together until thick and
smooth. Add vanilla and pour mixture into shell. Beat egg whites and
salt until stiff. Mix lightly with sugar and spread over pie. Bake 350
degrees for 15 min. or until meringue is golden brown. Turn off heat,
and let set in oven a few minutes with door wedged open. Makes 1 pie.
